Ingredients
FOR THE DRY MIX:
- 2 ¼ cups Robin Hood Flour
- 1 tsp baking powder
- ½ tsp salt

- 3 tbsp butter
- ¾ cup sugar
- 2 tbsp olive oil
- 2 eggs
- 2 tsp vanilla essence
- 3/4 cup pistachios chopped
FOR THE GARNISH:

Instructions
- In a bowl, mix flour, baking powder, and salt, and set aside.
- In another bowl, mix plant-butter, olive oil, and sugar. Add eggs and vanilla essence, and mix well.
- Add the dry mix to the wet mix, then add pistachios and mix well.
- Divide the batter into 2 logs and flatten them to 1 inch high.
- Bake the biscotti for 25 minutes at 350F, then let it rest for 5 minutes.
- Cut into 1-inch pieces and place cut side down. Bake for 8 minutes on each side.
- Let the biscotti cool for 15 minutes on a wired rack, then dip into melted chocolate and garnish with pistachios.
