Chocolate and Pistachio Covered Biscotti

Ingredients  

FOR THE DRY MIX:

  • 2 ¼ cups Robin Hood Flour
  • 1 tsp baking powder
  • ½ tsp salt

FOR THE WET MIX:

  • 3 tbsp butter
  • ¾ cup sugar
  • 2 tbsp olive oil
  • 2 eggs
  • 2 tsp vanilla essence
  • 3/4 cup pistachios chopped

FOR THE GARNISH:

  • ¼ cup pistachios chopped
  • Melted chocolate

Instructions 

  • In a bowl, mix flour, baking powder, and salt, and set aside.
  • In another bowl, mix plant-butter, olive oil, and sugar. Add eggs and vanilla essence, and mix well.
  • Add the dry mix to the wet mix, then add pistachios and mix well.
  • Divide the batter into 2 logs and flatten them to 1 inch high.
  • Bake the biscotti for 25 minutes at 350F, then let it rest for 5 minutes.
  • Cut into 1-inch pieces and place cut side down. Bake for 8 minutes on each side.
  • Let the biscotti cool for 15 minutes on a wired rack, then dip into melted chocolate and garnish with pistachios.
  • Let the garnish dry, then serve and enjoy.
